Process: Wet-hulled (giling basah), the traditional Indonesian method

These beans are grown by smallholder families in the Bajawa highlands of central Flores, Indonesia, near Mount Inerie. Portuguese explorers named the island Flores, meaning “flowers.” Its coffee grows in mineral-rich volcanic soil, where the tropical climate and higher elevations suit Arabica, and the growing and processing methods have been passed down through generations.

After harvest, the coffee is wet-hulled, a traditional Indonesian process known locally as giling basah. It gives the cup a heavier body and subdued acidity. Expect rich cocoa notes and a smooth, full body, with a subtle hint of citrus and the earthy, aromatic character that makes Indonesian coffees so distinctive.
