Process: Giling Basah—semi-washed and wet-hulled after pulping, then dried in the sun

These beans are grown by smallholder producers in the mountainous Toraja region of South Sulawesi, Indonesia. After harvesting, the coffee cherries are carefully sorted, depulped, fermented overnight, washed, and laid out to shed moisture.

The parchment is then removed while the beans still retain a high moisture content—a traditional Indonesian process known as Giling Basah. The exposed beans finish drying in the sun, developing their distinctive bluish color and the full-bodied, smooth, low-acid profile associated with coffees from the region.
